So, I baked Banana Walnut Bread instead. The house smelled even better and we sat down to a lovely quiet breakfast of hot bread with melted butter and coffee. It felt happy, calm and peaceful. Here's the recipe I made:
Banana Walnut Bread
- 3 mashed very ripe Bananas, about 2 1/3 cup
- 2 Eggs, beaten
- 1/2 cup unsweetened Applesauce
- 3/4 cup Brown Sugar
- 1 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 2 cups Brown Rice Flour
- 1/3 cup roughly chopped Walnuts
Preheat your oven to 350 F and lightly grease a loaf pan. In a large mixing bowl, combine the banana, eggs, applesauce, brown sugar & vanilla extra. Mix well. I use my immersion blender to process thoroughly. It makes things easy & quick to clean up! Stir in the baking soda, salt & brown rice flour. Mix well. At this point, I usually switch to a whisk or a mixer. Stir in the walnuts. Pour into your greased loaf pan and bake for 55-60 minutes.

After breakfast, I worked on samples for some new designs I'm planning on launching over the next few months. It feels so weird to work on new Mother's Day items in August but it does get me excited for what's to come. Then some yard work and now I'm off to my Yoga Birth Method class for some stretching and meditation. I can't believe this is my last week before I'm in my 3rd trimester. It seems like time is flying by and at the same time, 3 more months seems like way too long to wait to meet this kid. Insanity!
