I made this peach torte a couple of weekends ago as a last minute dessert for a last minute dinner invitation from our neighbors. It was quick, easy and delicious: my 3 requirements for summer dessert entertaining. I made it with peaches but it would be just as yummy with plums, or even apples in the fall.
- 1 stick Unsalted Butter
- 1 cup Sugar
- 1 tsp Vanilla Extract
- 2 large Eggs
- 1 cup All-Purpose Flour (Gluten Free works great! I used the Trader Joe's blend)
- 1 tsp Baking Powder
- 5 Peaches, pits removed and thinly sliced (tip: frozen peaches! Like I said, I like a fast and easy recipe. I keep frozen peaches in my freezer and take them out to defrost a few hours before I bake. Whallah! Sliced peaches in minutes)
- 1/2 Lemon
- 1 tsp Cinnamon Sugar mixture
In a large mixing bowl, cream the sugar and butter. Then add the eggs, vanilla extract, flour and baking powder. Scoop the batter into the prepared spring form pan and spread evenly. The batter may be sticky and difficult to spread. Wetting a spoon, spatula or even your fingers and using them to spread the batter will help. Arrange the peach slices in concentric circles and squeeze a bit of lemon juice over the torte. Spring with the cinnamon sugar mixture. Bake 45 minutes, uncovered. Check to see if the batter is cooked with a toothpick... if it's still wet, you may need up to an additional 15 minutes bake time (time has varied for me depending on my oven).
