Buckwheat Crepes and The Tree of Life

I posted this picture on Instagram yesterday and Abbe, my dear friend with delicious culinary skills, asked me to blog it.
The Buckwheat Crepe recipe is from this book, which I'm pretty sure my mom or someone found on a free table somewhere. Funny thing is, it's a GREAT gluten free cookbook. The recipes are easy, clean food, and tasty. Nothing fancy, but great basic food. I've used it for years and keep coming back to it. And it's available on Amazon for less than a $1. Go figure.

Anyway, back to the recipe. Here it is, with my modifications based what I had in my cupboards and fridge. Yesterday I ate it with frozen fruit I had in my freeze, sauteed in a pan and then drizzled with a bit of maple syrup. It was delicious on a freezing February morning.

Ingredients
1/3 Cup Buckwheat Flour
1/2 Cup Gluten Free All-Purpose Flour (I used King Arthur's)
pinch of Salt
1 Large Egg, Lightly Beaten
1/2 Cup Dairy Free Milk (I used real milk)
1/2 Cup Water
2 Tbsp Dairy Free Margarine (I used REAL butter. YUM)

Directions
Sift the flours together with the salt in a mixing bowl. Form a well in the center and pour in the beaten egg, milk and water. Whisk well to get rid of any lumps until you have a smooth batter. Melt the butter and pour it into the batter, whisking as you pour. Let the batter rest for 30 minutes.
Heat a medium size skillet, spray with non stick spray and when the skillet is hot, pour enough batter in to make a thin crepe, swirling to create an even layer. Cook until lightly brown, flip carefully using a spatula, and cook for a another minute or so.

If you have a smiley face pancake flipper, this would be an excellent time to use it
Love always having bags of frozen fruit on hand. Used this as yesterday's topping and this morning in our green smoothies.
Like I mentioned, yesterday I ate with some heated fruit and maple syrup. This morning, I made them again but served them with eggs, avocado and a green smoothie to wash it all down. Delicious and real food. Such a great way to start today.

What else happened yesterday? Well I think a new collection was born! I posted this picture on instagram and facebook and the response was lovely. After a few email requests, I added to ericasaradesigns.com as a charm and am working on adding an entire collection based on the design soon. Stay tuned!

And last but obviously not least, yesterday I announced that I'm hiring a team for the MORE Fitness Half Marathon. I was honestly worried that I wouldn't hear a peep from people but the response was amazing and I'm so excited!!! The bad news is that so many great women emailed me and I know I'll have to turn some of them away. But the good news is that I have enough applicants and probably won't be taking any more. Hoping to announce the team within the next couple of weeks!

So that's what's been going on around here. Today I'm going to focus 100% on photography for my website. I'm hoping to overall the entire site in the coming month, freshen it up, give it a whole new look with better navigation and images. I'm tempted to ask for feedback but a bit worried about what you'll say ;) So, please be kind but... what do you think could use improvement at ericasaradesigns.com?
