Greens with Lentils, Apples & Goat Cheese

If you follow me on twitter, you're aware that Robert and I are trying to have a #HealthySummer in an effort to get in better shape for our Fall Marathons. I've been trying to get back to the way I ate when I trained for my first Half, eating more salads and less meat and cheese. The more salads thing is happening. Less meat & cheese? Oops.

I was invited to dinner at Abbe & Baker's a week or so ago and Abbe mentioned she'd be making pasta so I offered to bring a salad. See? #HealthySummer in full swing! On the way over, I stopped at Trader Joe's and picked up some ingredients I thought would go well together: Spring Mix Greens, Lentils, Goat Cheese and Gala Apples. Then headed to Abbe & Baker's to partake in the evening's festivities.

The salad got amazing reviews all around which was awesome because, well, because delicious food is always awesome. But also because it was so ridiculously quick & easy to make and was pretty healthy. I've since added it to my repertoire, sometimes increasing the quantity and treating it as an entire meal, and sometimes swapping out the apples with crunchy brown pears. Yum. Seriously.

Here's the recipe, which doesn't include measurements because it's a salad. It's not science.

Greens with Lentils, Pears & Goat Cheese
Greens
Lentils (I buy the cooked vacuum packed ones at Trader Joe's. You can also buy canned or buy dry and cook yourself. They should be drained & cold)
Goat Cheese
Apples (I use Gala. The crispier, the better!)
a good Herb infused Olive Oil (this is my favorite)
Salt & freshly ground Black Pepper

Place greens on a plate and lightly toss with a teaspoon or so of your olive oil.  Core your apple and cut into wedges. Top the greens with lentils, the apple wedges, and a bit of goat cheese crumbled. Season with salt & pepper to your liking. Enjoy!

For our main course, Abbe made this insanely delicious pasta. Seriously, that girl comes up with the coolest combinations! It's nice having a friend who's a culinary goddess. Abbe made Pasta with Fennel, Strawberries and Basil.  It's not a combination I would have ever imagined but it was brilliant, I asked for seconds, and I absolutely plan on making it myself. Luckily, she posted it on her blog this morning and here it is!
 
This weekend, I'll be (dare I say) racing the LGBT Pride 5 miler in Central Park and cheering on my friend Dee at her track meet this weekend. Then a whole lot of work and packing to get ready for my trip to Mexico! Yes, ESD will be on vacation for a short while and I'm hoping to come back refreshed and ready to tackle all the excitement that I know the end of Summer and early Fall will bring.
