Growing & Grilling

Taking my morning walk to the water this morning, I couldn't help but smile and let out a little "yay!" Things are feeling pretty fantastic these days; I was with good company, the sky was a beautiful blue, the air was clear and crisp and summer is finally here.

I have so many things on my list to do this summer. Things that I've always had in the back of my mind but for some reason, just haven't taken the time to do. I want to grow herbs on my windowsill and I want to grill. These might seem like no big deal to most of you but I live in an NYC one bedroom with no outdoor space and a small windowsill. No terrace, no backyard, and no grill. But where there's a will, there's a way, right?

So this week, I pulled my grill pan out of the cupboard and planted some seeds in a small metal planter near my window. Although it's not outdoors, the grilling has been easy. I've tossed on lots of fresh veggies like asparagus, peppers and mushrooms and end up with delicious meals and pretty impressive grill marks. Yesterday's lunch was a perfect example. I gently cleaned a portabella mushroom, brushed it with olive oil, sprinkled with a bit of sea salt, and place on the grill until it was cooked through. I then took two pieces of Udi's gluten free whole grain bread, grilled them too, spread with goat cheese and added the mushroom for a delicious sandwich. It definitely tasted like summer!

I also finally planted a seed kit I picked up at Home Depot a few weeks ago. It included the seeds, planter & soil. All I had to do was put it all in the planter, place in a sunny spot and spray with water from time to time... in a few weeks, I should have basil, chives & parsley! Within just two days, my little seeds began sprouting and I would be lying if I didn't admit I literally danced around my apartment with joy. So far, it looks like only the basil and chives have sprouted but that's good enough for me. Here's are my little herbs growing... can't wait for the day I post a recipe using these delicious herbs.

Also on my list for this summer: lots of hiking, kayaking & maybe some camping, live music, eatng good food, training for the marathon.... I could go on and on and on. What's on your list?
